Always on Valentine’s Day, we send the grandkids a little something to let them know how special they are to us. And since 3 of them are growing boys, it can’t be too mushy but with 3 granddaughters, it needs to be cute and sweet. Cherries and Chocolate are perfect for Valentine’s Day! But Mice?? These Easy Chocolate covered cherry mice are sweet and cute for the girls but just enough out there to delight the boys. So why not??

These chocolate cherry mice are a favorite around Valentines Day but it’s also fun for Christmas or just any time you wish to surprise someone with a sweet treat that is totally adorable. And it doesn’t take that long to make several of these little sweet guys. Be sure and buy cherries with stems and if you purchase a Candy Melting Pot it does make it so much easier.
We are planning to make several of these cherry chocolate treats around Christmas and add one or two to the cookie treat boxes that we give our friends and family every year. Holidays should be fun and these are totally fun, not plain old chocolate-covered cherries here.
What you need to make chocolate covered cherry mice:
Ingredients:
- Maraschino Cherries, with Stems still attached
- Chocolate Kisses
- Sliced Almonds
- Chocolate Candy Melts
Equipment needed:
- Candy melting pot, optional
- Parchment Paper
How to make chocolate cherry mice:
- Remove the cherries from the juice and use a paper towel to drain and dry the cherries. The cherries need to be completely dry so the chocolate will adhere properly.
- Follow the package directions to melt the chocolate candy melts. (We used a candy melting pot)
- Hold a cherry by the stem and dip it into the melted chocolate until completely covered
- Place on parchment paper and repeat with the other cherries. Allow all of them to cool until the chocolate is hard
- Hold an unwrapped chocolate kiss by the tip and dip the bottom of it into the melted chocolate. But you need to only cover the bottom of the kiss. Then attach it to the coated cherry to make the head of the mouse. You will need to hold it in place for a second or two until it firmly attaches to the chocolate covered cherry.
- Take two slivered almonds and dip the widest end of each of them into the melted chocolate. Then attach them between the kiss and chocolate covered cherry side to side to make the ears.
- Enjoy!

How long will these last for? Do they start getting gooey? Do they require refrigeration after made?

I really don't know how long they last, we have usually make them for a special event and there is never any leftover. I do refrigerate mine but just for a day or so.
