Cowboy Salad Recipe or Mexican Caviar

A Cowboy Salad Recipe or Cowboy Caviar recipe that uses canned beans, jalapeños, onions and seasonings. This Texas treat is also called Hillbilly caviar or Mexican caviar but either way it is delish.

Like most Southerners I grew up with black eye peas but I have never tried them cold until I found this dish.   This Cowboy Caviar, sometimes called Texas Cowboy salad, can be made with different ingredients.   For instance, I have a friend that adds avocado to hers.   And that sounds great, doesn’t it?

Cowboy salad recipe, Cowboy Caviar recipe, Corn, beans, jalapeños and onions with a Italian dressing

 

Make this cowboy salad or as some of my friends call it, hillbilly caviar with some basic ingredients that add a variety of color and flavor. And you season it with a zesty  dressing and plenty of salt and pepper.   It is perfect for any picnic or cookout. 

 

Cowboy Salad Recipe:

Ingredients:

  • 1 cup sweet onion chopped
  • green bell pepper chopped
  • red bell pepper chopped
  • 15 oz can black eyed peas drained and rinsed
  • 15 oz can black beans drained and rinsed
  • 1 cup tomatoes diced
  • 15oz can or corn kernels drained and rinsed
  • 2 large jalapeños, diced and seeds removed or not
  • 1 1/4 cups zesty Italian dressing

 

Instructions:

  • Place all the ingredients into a large bowl and stir well.
  • Refrigerate for about two hours before serving.

 

Hillbilly caviar, mexican caviar recipe

 

Serve this Cowboy Caviar or  Texas caviar with tortilla chips or as a side dish.   And it goes great with BBQ brisket and I’m sure that’s the way most self-respecting Texas eat it.   Yeppers, we are partial to dishes that can be served with BBQ.

    1. This looks so delicious, Evelyn ! I do not think I have ever had black eyed peas before, but I have seen some in the supermarkets. Interesting name – the Caviar bit !
