Summer in the garden means an incredible overabundance of fresh tomatoes, cucumbers and zucchini, and yellow squash. We are always looking for many ways to use these fresh vegetables, we can our tomatoes, green beans to use all year, we freeze fresh basil pesto and have a Many Zucchini Recipes.
But it’s nice to not only pickle cucumbers but have several recipes to incorporate these vegetables in our daily meal plan.

My mother used to make this easy dish of marinated cucumbers. And her’s were always cool and crisp and were often in the fridge in the summer. My mother would also use just about this same recipe for fresh shredded cabbage. I remember whenever we visited my grandfather on his Arkansas farm, he would always ask her to make it. She told me once this was exactly how her mother made cucumbers and the cabbage. I’m experimenting with cabbage now and hopefully, I can replicate her recipe on that also.
How to make Marinated Cucumbers or Cucumber salad with vinegar:
These marinaded cucumbers are not like pickling or even refrigerator pickling. Fresh cucumbers are peeled and sliced and placed in a brine of vinegar and sugar. There is no cooking involved and these cucumbers retain their fresh crunchy texture.

Start your marinated cucumbers by slicing the cucumbers with a sharp knife or a mandolin. Slice about 1/4 cup of white onions.
Add sugar, vinegar, and celery salt into a small bowl, mix well.
Place the cucumbers in a leakproof container and top with the sliced onions.

Pour the marinade over the cucumbers, cover, and place in the fridge overnight or for at least four hours. We love these Rubbermaid Brillance containers, they seal well, leakproof and come in several sizes.
Right now my garden is producing the best cucumbers and it’s too hot to pickle them so we are enjoying this cool fresh side dish. These marinated cucumbers make a great picnic dish or potluck side.

Ingredients
- 1/4 cup sugar
- 1/4 cup vinegar
- 1/2 teaspoon salt
- 1/4 teaspoon celery salt
- 2 cups cucumbers peeled and sliced
- 1/4 cup sliced onions
- Fresh parsley optional
Instructions
- In a bowl, combine first four ingredients, mix well
- Add sliced cucumbers and onions in a refrigerator storage container, pour contents from bowl over them
- Cover and refrigerate several hours or overnight
- Prior to serving add fresh chopped parsley (optional)

Love cucumber salad ! I would never have thought of adding a bit of celery salt and it was delicious
