These New Orleans Beignets are made with yeast, flour, and simple bread ingredients. The key to this delicious New Orleans Pastry is that they are deep-fried. We mix a simple beignet recipe dough, let it stand in the fridge overnight. Then we remove it from the fridge, roll it out and cut the dough into squares. We fry these in an electric deep fryer filled with hot oil. And as soon we remove them from the oil, we pile powdered sugar on top for the best beignets outside of New Orleans.

Beignets are a classic New Orleans Treat, they are similar to a doughnut but are square and without a hole. Some beignets are just tossed with powdered sugar but I love to serve them in a typical Café du Monde fashion with all of the powdered sugar pilled on top. And in our opinion it has to be served with a cup of Cafe du Monde chicory coffee!
Since we can’t easily hop over to New Orleans to enjoy this awesome treat we have created this beignet recipe. These plus some Chicory Coffee, New Orleans jazz playing and we are enjoying the Big Easy at home.
What you need for this New Orleans Pastry Recipe:
Ingredients:
- 1/4 ounce package active dry yeast
- 1/4 cup warm water
- 1 cup evaporated milk
- 1/2 cup vegetable oill
- 1/4 cup sugar
- 1 egg
- 4 1/2 cups all purpose flour
- 5 teaspoons baking powder
- 2 teaspoons salt
- Powdered Sugar
Equipment Needed:
- Deep Fryer like a Fry Daddy
- Canola oil for frying
- Mixing bowls
- Mixer
- Rolling Pin
How to make beignets:

In a large mixing bowl, dissolve yeast in warm water.

In a smaller bowl, sift flour with baking powder and salt

To the yeast mixture, add milk, oil, sugar, egg and 1/2 the flour mixture.

Beat until smooth.

Stir in enough remaining flour to form a soft dough (dough will be sticky)

Cover and refrigerate overnight.

Punch dough down. Turn the pastry dough onto a floured pastry sheet then roll into a 16×12-in. rectangle. Use a pastry cutter to cut into 2-in. squares.

Heat oil to 375° in an electric deep fryer or in a dutch oven

Deep fry the pastry dough squares, a few at a time, until golden brown on both sides.

Drain on a rack over paper towels.

Dredge or cover with powdered sugar
