Huli huli chicken is a Hawaiian dish consisting of a whole chicken grilled over an open fire using mesquite wood. It is heavily basted with a sweet teriyaki-inspired sauce called huli huli sauce. Instead of a whole chicken we are using just the drumsticks and an indoor grill to prepare a fabulous Hawaiian inspired meal.

These chicken drumsticks are covered in our homemade huli huli bbq sauce and placed in the refrigerator to marinade for 30 minutes or more, up to overnight. Then removed from the fridge and placed on a hot grill and heavily basted with the huli huli sauce while cooking.
Huli Huli Chicken Drumsticks Recipe:
Ingredients:
- 1/4 cup brown sugar
- 3 Tablespoons ketchup
- 3 Tablespoons soy sauce
- 2 Tablespoons chicken stock, as needed
- 1/2 teaspoon fresh ginger, minced or crushed
- 1 teaspoons garlic, minced or crushed
- 8 Chicken Legs
Equipment Needed:
- Mixing Bowl
- Marinade Container
- Grill Pan or Indoor Grill
- Basting Mop
How to make Huli Huli BBQ Sauce:
In a medium-sized bowl, mix together the brown sugar, ketchup, soy sauce, ginger and garlic. Add enough chicken stock to make the sauce easy to spread. Reserve 1/2 of the huli huli bbq sauce to use for basting in a separate bowl.
Place the chicken drumsticks in a casserole dish or other marinade container and pour half of the Huli Huli sauce on top. Remember: To reserve the other half of the huli huli bbq sauce to use for basting in a separate bowl. Cover and refrigerate for at least 1 hour, or overnight.
How to grill Huli Huli Chicken Drumsticks:
Remove marinaded drumsticks from the refrigerator and allow to come to room temperature about 30 minutes to an hour.
Note: if you put cold chicken on the grill, the heat dries out the meat on the outside before the inside is done. So always allow to come to room temps before cooking.
Set your indoor grill or grill pan over medium-high heat. Rub or spray cooking oil on the pan and wait until it gets hot. Using tongs, place the chicken on the grill, being sure not to have the them touching.
As the drumsticks are grilling use a pastry brush or BBQ mop to apply the reserved sauce. Sear the chicken legs on each side, approximately 4-6 minutes.
Reduce the heat to medium and continue to cook until the huli huli chicken drumsticks reaches an internal temperature of 165° F.
