This mango pico de gallo recipe is a delicious spin on plain pico. The mango adds a sweet contrast to the spicy jalapeños and onions. And it’s seasoned with minced garlic and a clean tasting rice wine vinegar.

This is such a pretty dish and its so versatile and we have served it in so many different ways. Just be sure to give it time in the fridge for all the flavors to come together. It brings cheer to just about any dish like fish tacos, grilled chicken, grilled pork or use as a fruit salsa for salmon.
Mango Pico de Gallo Recipe:
- Two Fresh Mangos, diced (or one 15 ounce can diced mangos)
- ½ cup red onion, chopped
- 3 jalapeños, chopped (for less spice use less jalapeño)
- ½ cup of red bell pepper
- 2 cloves garlic, minced
- 2 Tablespoons rice wine vinegar
- salt to taste
Equipment:

- Pico serving bowl
How to make Mango Pico de Gallo:
Start by adding the chopped mangos, bell pepper, jalapeños and red onions to a mixing bowl.
Add the minced garlic and spoon the rice vinegar over everything. Toss or gently stir to combine and add salt to taste.
Place in refrigerator and allow the flavors to marry or come together for at least an hour. Even though we mainly serve it with our Cedar Planked Salmon Fillets, it is delicious served with tortilla chips. Or top a grilled chicken breast or even grilled pork chops with plenty of this colorful and tasty mango pico salsa.
