We use frozen hash browns, two different kinds of cheeses plus sour cream to make this amazing ham egg hash brown casserole.  This is definitely going to be one of those breakfast casseroles that we have on the ready for Sunday brunch for even for Christmas morning.   

 

How to make this breakfast casserole with hash browns and ham:

Ingredients needed for this brunch bake:

  • 4 eggs
  • 1 cup milk
  • 1 cup sour cream
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 3 cups Monterey Jack and cheddar cheese, shredded (divided)
  • 2 cups ham, chopped
  • 1 medium yellow onion, chopped
  • 20-ounce package hash browns

Start your ham egg hash brown casserole by preheating your oven to 375°F.   In a large bowl, whisk together the eggs, milk, sour cream, salt, and pepper.   Mix the cheddar and the Monterey jack cheese in a separate bowl.

Stir in 2 cups of the shredded cheeses into the egg and milk mixture reserving one cup of the mixed cheese.  Set both bowls aside.

In a medium large skillet, combine ham and onions. Cook over medium heat until onions soften.

Add hash browns to skillet. Cook for about 5 minutes or until the hash browns are lightly browned.

Remove the skillet from the heat and then add egg mixture and gently fold together.

 

 

Pour the mixture into a greased 9”x13” pan and sprinkle remaining cheese on top. Then cover and bake for 35 minutes.
