Cast Iron Skillet Cheesy Potatoes

These cheesy skillet potatoes are a much loved favorite in our house and we believe they will be in yours.  We brought them up a notch or two by adding sour cream and ranch seasonings to the onions and garlic.   This is not your ordinary cast iron skillet cheesy potatoes it has so much more flavors.  

 

What’s in these cast iron skillet cheesy potatoes:

 

sour cream, potatoes, cheese, bacon ranch seasoning, onion and garlic

 

Ingredients:

  • 5 cups peeled and cubed potatoes, approximately 5-6 potatoes
  • 4 slices bacon
  • 1 onion, diced
  • 3 cloves garlic, smashed and sliced
  • 1/2 cup sour cream
  • 1/2 cup milk
  • 1 Tablespoon ranch seasoning
  • 2 cups shredded cheese

How to make cheesy skillet potatoes:

Bring your large pot of water to a boil over high heat.   And add the cubed potatoes and cook for 5 minutes until they are fork tender.  Pour in a colander to drain then rinse the potatoes.

In a large cast iron skillet over medium heat, cook your bacon until crispy.   Remove the bacon to a paper-towel lined plate.

Add the chopped onion to your hot skillet, for 2 minutes.  Then add the garlic and potatoes. Cook until potatoes, onion and garlic are well-browned, stirring rarely.

Meanwhile in a small mixing bowl, combine the sour cream, milk, ranch seasoning.  Mix well.

Add 1 cup of the shredded cheese to the cream mixture and gently combine.

Stir the sour cream mixture into the skillet potatoes and continue to cook over medium heat for 3-4 minutes, until sour cream mixture has thickened.

Sprinkle the remaining cheese on top of the potatoes.   And chop the reserved bacon and sprinkle on top.

Allow the cheese on your cast iron skillet potatoes and onions to melt before serving.
