These Chocolate Peppermint Bars are layered chocolate peppermint cookie bars. These Peppermint Christmas Cookies Bars are extra special for Christmas.
Christmas is a very special time of the year and it’s always fun to indulge in extra special treats. These Chocolate Peppermint Cookie Bars are extra special. But they are fairly easy to make since we made them into bars. And they are not overly sweet and are great for the grandkids or served at a Christmas party. Plus they look just gorgeous stacked on a plate.

These Chocolate Peppermint Cookie Bars are made in layers, a sugar cookie layer, a chocolate brownie layer and they are topped with melted white chocolate and crushed peppermint.
Chocolate Peppermint Bar Recipe:
Sugar Cookie Layer
- 1 1/2 cups flour
- 1/4 teaspoon salt
- 10 Tablespoons butter, softened
- 1/2 cup sugar
- 3/4 cup white chocolate chips
Brownie Layer:
- 3/4 cup flour
- 3/4 cup unsweetened dark cocoa powder
- 1/2 cup sugar
- 1/4 teaspoon salt
- 10 Tablespoons butter, melted
- 1 egg
- 3/4 cup milk
- 1/4 teaspoon mint extract
- 3/4 cup semi-sweet chocolate chips
Top Layer:
- 1 ¼ cups white chocolate chips
- 5 chocolate mint candy canes or regular candy canes
Equipment Needed
- Mixer
- 13 X 9 Baking Pan
- Non Stick Aluminum Foil
How to make these Chocolate Peppermint Cookie Bars
Instructions:
Heat oven to 350 degrees F and line a 13 X 9 inch baking pan with non-stick aluminum foil
Sugar Cookie Layer:
- In a bowl, whisk flour and salt
- In a separate bowl, beat melted butter and sugar with a mixer until fluffy, about 2 minutees
- Add flour mixture to butter and sugar mixture and beat to combine
- Stir in white chocolate chips
- Press firmly and evenly into your foil-lined pan
- Place in refrigerator for 15 minutes
Brownie Layer

In a large bowl, whisk flour, cocoa powder, sugar, and salt. Beat in melted butter, egg, milk and mint extract. Stir in semi-sweet chocolate chips.

Dollop evenly over sugar cookie layer and spread with a spatula dipped in warm water to prevent sticking. (re-dip as needed)
To Make

Bake at 350 degrees for 30 minutes cool on a wire cooling rack

Remove from pan and place on work surface.

Meanwhile, melt the remaining (1 1/4 cups) white chocolate chips per package directions.

Drizzle or spread over bar cookies

Crush candy canes and sprinkle over the top

After white chocolate is cooled and hardened, cut into squares
These bars are just extra special with all the layers and then the crushed chocolate peppermint candy canes. It is so worth the little extra work.
