We usually make these chocolate peppermint cookies around Christmas time but these are so versatile. If you left off the peppermint, you could also serve them as chocolate cookies with caramel chips year around. They would be great for an after school snack or you could use red candy melts and give them for Valentine’s Day.

If you are looking for a pretty but delicious little Christmas cookie then this is the recipe for you. It’s easy but it is loaded with flavor with the chocolate and caramel and topped with white candy stripes and crushed peppermint. It’s a cookie that everyone can love!
How to make chocolate peppermint cookies:

For the cookies:
- 1 egg
- ¾ cup of sugar
- ¼ cup brown sugar
- 1 stick butter softened
- ½ cup chocolate chips, melted
- 1 cup flour
- ¼ cup of cocoa powder
- 1 tsp baking soda
- ½ tsp salt
- 1 cup of caramel chips
To decorate:
- 1 cup white candy melts
- 5-7 peppermints, crushed into small bits
Line a baking sheet with parchment paper and set it aside. Preheat your oven to 350 degrees F. Then in a large bowl, cream together egg and both sugars.
If you haven’t set out the butter to soften you can microwave it in a microwave-safe bowl or carefully heat it on the stove to soften.
Add butter and use an electric mixer to beat until smooth. Add melted chocolate chips and mix until all ingredients are well-incorporated and set aside.
In another bowl, sift together all dry ingredients: flour, cocoa powder, baking soda, and salt.
Slowly add dry ingredients into wet ingredients and mix until cookie dough forms.
Using your spatula gently fold the caramel chips into the cookie dough until well incorporated.
Use a cookie scoop (approx. ¼ cup) to scoop cookie dough onto the lined baking sheet.
Bake the chocolate cookies with caramel chips for 11-14 minutes remove from oven and allow them to cool. In a microwave-safe bowl, microwave the white candy melts in 30-second intervals until completely melted. Be sure to stir between each interval.
Pour the melted candy melts into a piping bag and drizzle onto each cookie. Then sprinkle each cookie with crushed peppermint. Place on wire racks and allow to cool and the white candy to set before serving
