My mother loved Chocolate Covered Cherries, we always bought her those little boxes that appear around Christmas time.  Even when Alzheimer’s claimed her, she never forgot about those cherries.  She didn’t always know who I was but her face would light up when we gave her these candy gifts.  She was also a lover of homemade treats and would have been pleased to have some of these homemade chocolate covered cherries in her favorite Fostoria Crystal bowl near her chair.   
 
We have been wanting to try our luck in making homemade Chocolate Covered Cherries and have studied up on the process.  And we have discovered it’s not that hard with a few tricks.

Tips for the Best Chocolate Covered Cherries

We also decided to choose a dark chocolate for our chocolate coating since we know of so many great health benefits associated with dark chocolate.   And we just love tempered chocolate. Who doesn’t love the snap when you bite through the coating into that gooey center?

 We wanted our Chocolate Covered Cherries with a gorgeous shiny chocolate coating with that awesome snap into gooey treasure and we wanted a thicker coating.

 

What you need for this Chocolate Covered Cherry recipe:

Ingredients:

  • 1/4 cup butter, at room temperature
  • 1/4 cup sweetened Condensed Milk, (not evaporated)
  • 1 Tablespoon cherry juice,(retain from the drained cherries
  • Pinch of salt
  • 2 1/2 cups of powdered sugar
  • 10 ounce jar of maraschino cherries (30-35)
  • 1 pound of Dipping and Coating Chocolate (no tempering required chocolate)

 

Equipment Needed:

  • Silicone Mats
  • Chocolate Melting Pot or Double Boiler
  • Candy Thermometer

 

Instructions for these dark chocolate covered cherries:

  • Drain Cherries and retain juice
  • Spread cherries on a cookie sheet, lined with a silicone baking mat.  Place in freezer for at least 2 hours
  • Mix butter, sweetened condense milk, cherry juice, salt and powdered sugar until well blended and smooth. Place in refrigerator for a least an hour to chill. 
  • Remove filling from fridge and roll two teaspoons of the filling into a ball.  Flatten it out and place a frozen cherry in the center, roll into a ball making sure the cherry is completely coated.
  • Place coated cherries on a baking sheet lined with silicone mats or parchment paper.  Make sure the cherries don’t touch each other and place the baking sheet in the freezer for 2 hours. 
  • Heat the dark chocolate in a melting pot or a double boiler.  Remove a few coated cherries at a time and dip them into the melted chocolate removing them with a slotted spoon.  Place each on the silicone mat.  Refrigerate until firm.

My dad loves chocolate covered cherries too. We have to get him a box of them every Christmas. I keep thinking I need to make some instead... It is sweet that they make you think of your mom.
