We decided to do a little different kind of cookies today for Valentine’s Day. We have been wishing to make Linzer cookies for a while. So we decided to go over the top today and use alphabet cookie cutters to make valentine sandwich cookies using cherry jam. And these Linzer cherry jam cookies could be used to spell out sweet love messages.

These Linzer Valentine Cookies could be used to spell out anything even your loved one’s names or you could use different shapes like hearts, smiles or numbers. I think emojis cut-outs would be fun also. And these cherry jam cookies are not just for Valentine’s Day but also would be welcomed at Christmas or Halloween just by using different cookie cutters.
Linzer Valentine Cookies Recipe:
Ingredients:
- ½ c. Butter room temperature
- ½ c. Sugar
- ½ tsp Vanilla extract
- ½ tsp Cinnamon
- ½ tsp Almond extract
- ¾ c. Ground pecans
- 1 ½ c. Flour
- Pinch of salt
- 1 Egg
- Cherry jam
- Powdered sugar for garnish
Equipment Needed:
- Round cookie cutter
- Small letter-shaped cookie cutters
- Mixing Bowl
- Rolling Pin
- Pastry Mat
- Baking Sheets
- Parchment Paper
Making these valentine sandwich cookies:
To start these Valentine sandwich cookies preheat your oven to 350 degrees F. Add the softened butter to a large mixing bowl.
Add the sugar to the mixing bowl and cream the butter and sugar together until smooth.
Add in the egg, vanilla extract, and almond extract to the butter-sugar mixture and beat until well blended.
In a separate mixing bowl combine the ground pecans, flour, salt, and cinnamon. Stir to combine well.
Add the dry ingredients into the wet mixture, and beat on high until just combined. Separate the dough into two sections, wrap each in plastic wrap, and place the dough in the freezer for about 30 minutes. This will make it easier to handle.
Remove one half of the dough from the freezer, and roll it out to about ¼ of an inch thick on a well-floured surface. Use a round cookie cutter to cut out individual cookies.
Place the cookies on a parchment-lined baking sheet, and bake for 10-12 minutes until crisp and golden brown. Remove and place on cooling racks.
Meanwhile, roll out the other half of the dough, and use the same cookie cutter and cut out more cookies. Then use alphabet cookie cutters to cut out the shapes of different letters in the center of the cookies. You can spell out any Valentine’s themed words or phrases that you like.
Place the cookies with the letter cut-outs onto another lined baking sheet then bake them for 10-12 minutes. And then remove and let cook on a cooling rack.
Assembling these Cherry Jam Cookies
Cool all of the cookies completely, and then place a thin layer of cherry jam on the solid round cookies.
Place a cookie with a letter cut out on top of the jam topped cookie to form one sandwich cookie. And continue with the remaining cookies.
Sprinkle the cookies with a layer of powdered sugar and serve immediately, or store in an airtight container.
