But if you wish you could certainly make homemade mini pancakes to use in this recipe. And for a fun variation you could use bacon or ham instead of the sausage patties. We used a mini muffin tin to create the cooked eggs in the size that fits the mini pancakes. It is the same mini muffin tin that we use for mini cornbread muffins.) And it is also great for mini muffins, cookie cups, and mini brownie bites. So if you don’t have one it’s not a waste to buy one just for these mini breakfast sandwiches.
Mini McGriddle Breakfast Sandwiches Recipe:
Ingredients:
- 24 frozen mini pancakes (we use Hungry Jack)
- 4 eggs
- 2 tablespoons milk
- 12 frozen sausage patties (we use Banquet)
Equipment Needed:
- Sheet Pan
- Parchment Paper
- Mixing Bowl
- Large Skillet
- Non-Stick Baking Spray
- Mini Muffin Tin
Step-by-step guide to preparing delicious mini pancake sausage sandwiches:
Preheat your oven to 350° F. Line a baking sheet with parchment paper and place the mini pancakes in an even layer over the sheet. Cover with another piece of parchment paper and set aside.
For the egg layer of these mini McGriddle breakfast sandwiches whisk together the eggs, milk, salt, and pepper in a large mixing bowl, until well combined.
Spray 12 cups of a mini muffin pan with nonstick cooking spray and pour the mixture evenly into 12 of the cups. Place the muffin tin in the oven to bake for 10 minutes. After 10 minutes place the pan with the pancakes in the oven. Continue baking for an additional 10 minutes. (Eggs cook for 20 minutes and pancakes for 10 minutes)
While the eggs and pancakes are cooking, cook the sausage patties in a skillet over medium heat. Transfer the cooked sausage patties to a paper towel lined plate while the rest of the ingredients for these mini McGriddle breakfast sandwiches finish baking.
When everything is finished baking, prepare the sandwiches by stacking one sausage patty onto each of the 12 mini pancakes, leaving the other half for the tops.
Carefully remove the eggs from the muffin tin and stack one egg cup onto the top of each of the sausage patties.
