How to make Purple Witches Hat Cookies:
Preheat your oven to 375° F and line a baking sheet with parchment paper. In a medium bowl whisk together the flour, baking powder, and baking soda and set aside.
In a separate large mixing bowl, add the sugar, brown sugar, peanut butter, and butter. Beat with a mixer until light and fluffy.
Add the egg, vanilla, and purple food coloring to the butter sugar mixture and beat until well combined. NOTE: You could go easy on the purple food coloring at first and add more until your desired color is reached.
Add the bowl with the dry ingredients to purple dough mixture and beat until very well mixed.
Pour the purple sprinkles in a small bowl. Use a small cookie scoop to scoop out balls of the purple dough and roll each dough ball into the purple sprinkles, coating them completely.
Place each sprinkle covered purple cookie ball on the parchment covered baking sheet. Place in preheated oven and bake for 10 to 13 minutes, until the edges are golden brown but the center is still soft.
Immediately after removing your Halloween Cookies from the oven and while the cookies are still hot, press one Hershey Kiss into the top of each cookie to make a witch’s hat.
Allow the cookies to cool on the pan for about 5 minutes, then transfer them to a wire cooling rack to cool completely. These peanut butter witch hat cookies can be stored in an airtight container at room temperature for about 3 days. Or store them in an airtight container in the fridge for up to 2 weeks.
