We all know we need to add more vegetables to our diet and we all try to serve them to our kids. But no matter how many veggies we put on the table, if no one eats them, it’s all in vain. I really can’t blame anyone for not eating some vegetables. When they are overly steamed or boiled and are bland and limp, I wouldn’t eat them either.
But we have something today that might change their minds, our Roasted Broccoli Recipe! It’s a delicious caramelized roasted broccoli recipe topped with parmesan cheese. We have discovered over the years that we like our veggies cooked to just the point where they still have an inner crunch but are not raw and we always prefer seasonings such as fresh citrus. Besides who wants to overcook this gorgeous veggie? Not me and I are sure not you. And our Roasted oven Broccoli method will cook them to perfection.
And just a note, overcooking broccoli (especially boiling) can cause it to lose not only its a beautiful color but a lot of its nutritional punch. I remember when I first discovered broccoli. We would buy those little-frozen bags of broccoli with a runny cheesy colored stuff that we would microwave. Yeah, that got me eating broccoli but it didn’t make me any healthier. And now that I look back, that sauce wasn’t really that good.

What is in this Roasted Broccoli recipe:
Ingredients:
12 ounces of fresh broccoli florets
2 Tablespoons olive oil
1 Tablespoon lemon juice
2 cloves garlic, finely minced
salt to taste
freshly ground black pepper to taste
1/4 cup of grated Parmesan cheese
How to make Caramelized Roasted Broccoli:
And one of the best secrets to cooking broccoli and getting the kids to eat it is roasting. A caramelized broccoli brings out all the sweetness but still retains all that gorgeous color. This Roasted Broccoli is made with seasonings of freshly squeezed lemon juice, garlic cloves, plenty of salt and freshly ground black pepper. These seasonings will greatly help the chances of getting those little ones to try these vitamin-rich veggies.
Start making your blackened broccoli by preheating your oven to 425 degrees F. Then place broccoli florets in a medium-size bowl, add olive oil, lemon juice, garlic, salt, and pepper. Toss the broccoli to coat evenly with the seasonings and spread evenly on a large sheet pan.
Bake for 15-18 minutes, tossing about halfway through the cooking time. This is to ensure that the broccoli cooks evenly and makes a gorgeous caramelized broccoli.
Remove the caramelized broccoli from the oven and serve topped with the shaved or grated Parmesan cheese. Whether you add a cheese sauce or sprinkle the blackened broccoli with freshly grated cheese, either one would work for me and probably for your little ones. I love broccoli and eat it often, but I am getting a bit bored of eating it plain and steamed. This looks so yummy. I have never tried it roasted or with parmesan. Interesting!
