Our garden is doing fantastic this year. We had early rains and they gave it a great start and now we are reaping the rewards. The Grandkids harvested the potatoes this year for us. We plant potatoes using the Ruth Strout method by placing our seed potatoes under a thick layer of mulch and they grow. Slow Cooker Green Beans and Potatoes Recipe:
Ingredients:
- 2 pounds fresh green beans, ends trimmed
- 1 pound Yukon Gold or Red Potatoes, cut into chunks
- ¼ pound of bacon (cooked or raw) (We used Members Mark Bacon Real Crumbled Bacon from Sam’s Club.)
- 1 small onion, finely diced
- 2 garlic cloves
- 32 ounces chicken broth
- salt to taste
- black pepper to taste

How to make fresh green beans and potatoes in a crock pot:
Clean, trim and add green beans to a 7-8 quart crock pot. And add washed and chunked potatoes along with the bacon, diced onion, garlic. Pour in the chicken broth, season with salt and pepper and gently stir or toss to combine. Cover and cook on high for 3-4 hours or on low 6-7 hours.
Remove lid and adjust salt and black pepper to taste. Serve and enjoy.
