It may take an afternoon to roast them, but the labor is very minor and once you and your family try them, you will be so glad you took the extra time to slow roast these tomatoes.

Slow Roasted Tomatoes
Ingredients
- 12-15 Roma Tomatoes
- 1 Tablespoon of dried basil
- 1 Tablespoon of dried oregano
- 3 cloves of garlic, crushed
- pinch of salt
- 2 Tablespoons of olive oil
Instructions
1. Heat oven to 225 degrees F
2. Cut the Roma tomatoes in half lengthwise (from stem down)
3. Place the cut tomatoes in a large bowl
4. Add basil, oregano, garlic, salt and olive oil
5. Mix well, gently turning the tomatoes until all are coated with herbs and olive oil
6. Place cut side up on a rimmed baking pan
7. Bake in oven for 5-6 hours

I also prefer Roma when roasting ! Love the Italian spin on these :-)
