Ingredients:
- Egg roll wrappers
- Leftover turkey
- Leftover mashed potatoes
- Leftover Stuffing
- Cranberry sauce
- Vegetable Oil
Equipment Needed:
- Small bowl of water
- Fry Daddy Deep Fryer or deep skillet
How to fill and fold Egg Rolls:
Lay one egg roll wrapper on a clean surface in a diamond formation with one point directly across from you. Spread cranberry sauce into the center of the wrap horizontally.
Spoon a little more than a tablespoon of mashed potatoes and stuffing on top of the sauce.
Lay a few pieces of turkey on top of the other ingredients
How to Fold an Egg Roll:
Gently lift the bottom corner of the wrapper and fold over, securing all the ingredients in the center.
Fold both the left and right sides of the wrapper towards the middle. Moisten any of the overlapping edges with a touch of water to seal them together.
Roll the egg roll wrapper towards the remaining corner while holding the filling together snugly in a cylinder shape.
Moisten the edges of the wrap with water to seal the egg roll so your filling does not leak out.

Heat oil in either a deep skillet or a heavy bottom large sauce pan to 325 degrees F. Or you could use a Fry Daddy Deep Fryer. Add two egg rolls at a time and fry for 2-3 minutes making sure to turn them halfway thru so both sides are crispy.

Spray the basket of the air fryer with nonstick cooking spray. Place 3-4 egg rolls seam side down in the basket in a single layer so they are not touching. Either spray or brush egg rolls with vegetable or olive oil and close the air fryer.
Remove the egg rolls from the hot oil and place on a paper towel lined plate to drain.
