Cut the bread slices into 1-inch cubes, and do the same with both packages of cream cheese.Tip: Pop the cream cheese in the freezer for 10-15 minutes beforehand—it firms up nicely and makes cubing much easier!
Grease a 9×13-inch baking dish and arrange half of the bread cubes in an even layer on the bottom.Scatter half of the cubed cream cheese (8 ounces) over the bread, then sprinkle with 1 cup of the blueberries.
Repeat the layering process: add the remaining bread cubes, followed by the rest of the cubed cream cheese and the second cup of blueberries.
In a large bowl, whisk together the eggs, milk, vanilla extract, and maple syrup until thoroughly combined and smooth.
Pour the egg and milk mixture evenly over the layered casserole. Cover the dish tightly with plastic wrap or foil, and refrigerate overnight (or at least 8 hours) to let the bread soak up all those delicious flavors.
Remove the Blueberry Cream Cheese French Toast Casserole from the refrigerator and let it sit at room temperature for 30 minutes.
Meanwhile, preheat your oven to 350°F. After 30 minutes, cover the dish with foil and bake for 30 minutes. Then, remove the cover and continue baking for another 20-30 minutes, or until the center is set and firm.
Golden, custardy, and bursting with creamy pockets of cream cheese and juicy blueberries, it’s a family favorite that’ll have everyone coming back for seconds. Drizzle with that quick homemade blueberry syrup (or dust with powdered sugar) for pure bliss!
