Ingredients

for the cake

  • 1 lb. butter
  • 2 cups sugar
  • 6 Eggs beaten
  • 1 lb. chopped pecans
  • 3 cups flour
  • 1 teaspoon Baking Powder
  • 1/4 teaspoon salt
  • 2 teaspoons vanilla

for the powdered sugar icing

  • 1 and 1/2 cups powdered sugar
  • 6 tablespoons heavy cream
  • 1 teaspoon Vanilla

Instructions

  • Preheat oven to 250 degrees F
  •  Cream together butter and sugar using a hand mixer.  And add in the beaten eggs and continue to whip well. 
  • Slowly add in flour, while mixing with and then add baking powder and salt.  Next, add in nuts and vanilla, and mix with a hand mixer until well combined
  • Pour the butter pecan cake batter into a greased bundt pan and place in the preheated oven. 
  • Bake at 250 degrees for 2 hours or until baked through and remove from the oven and place on a cooling rack.
  • Turn out the hot pecan bundt cake onto a serving place.
  •  Make the powdered sugar icing recipe by mixing together powdered sugar, cream, and vanilla in a medium bowl.
  • Pour glaze over the still-warm cake and serve and enjoy it.
