- 2 cups blueberries fresh or frozen
- ½ cup sugar
- 1 cup water
- 1 Tablespoon cornstarch
- 2 Tablespoons water
- whole berries for serving, optional
In a medium saucepan, bring water, sugar, and berries to a boil. Stir occasionally.
Reduce heat and simmer for 10 minutes.
Combine 2 Tablespoons water and cornstarch in a small jar with a lid and shake well. (Mason jar works great)
Add the water-cornstarch mixture to simmering berries
Stir continuously as the sauce thickens and the blueberries burst. Serve over pancakes or waffles adding additional berries if desired.
Store covered in the refrigerator for up to two weeks.
