Ingredients
2freshMangosdiced (or one 15 ounce can diced mangos)
½cupred onionchopped
3jalapeñoschopped (for less spice use less jalapeño)
½cupred bell pepper
2clovesgarlicminced
2Tablespoonsrice wine vinegar
salt to taste
Instructions
Start by adding the chopped mangos, bell pepper, jalapeños and red onions to a mixing bowl.
Add the minced garlic and spoon the rice vinegar over everything. Toss or gently stir to combine and add salt to taste.
Place in refrigerator and allow the flavors to marry or come together for at least an hour. Then serve
Notes
Even though we mainly serve it with our Cedar Planked Grilled Salmon Fillets, it is delicious served with tortilla chips. Or top a grilled chicken breast or even grilled pork chops with plenty of this colorful and tasty mango pico salsa.
