Ingredients
For the Beef and Guinness Filling
1 1/2poundslean beefcut into bite-size cubes
salt
2sprigsfresh rosemaryleaves removed and chopped or 1 teaspoon dried rosemary
2tablespoonsflour
2-3tablespoonsolive oil
1smallonionDiced (about 1 cup)
1carrotdiced
3potatoespeeled and diced
ground black pepper
111.2 oz bottleGuinness Lager
114 oz candiced tomatoes
1tablespoontomato paste
1cupwater
2cupsbeef stock
For the White Soda Bread Topping
2cupsflour
3tablespoonsbutterchopped into pieces
2tablespoonssugar
1teaspoonbaking soda
1teaspoonbaking powder
1/2teaspoonsalt
1cupbuttermilk
Instructions
Salt and pepper the steak cubes, drop into a batter bowl, add flour, seal and shake until well coated.
Heat olive oil in a large dutch oven. Add meat and stir gently until all sides are brown. Add onions, carrots and potatoes and rosemary, cook until onions are soft, stirring as needed. Add the tomatoes, Guinness Lager, tomato paste, water and beef stock, heat to boiling.
Reduce heat and simmer for 2-3 hours, stirring occasionally and adding water if needed. Cook until veggies are tender and the sauce has reduced to a thick gravy.
Heat oven to 375 degrees.
Pour the meat and veggie mixture into a 9 X 9 casserole dish.
Make the White Soda Bread Topping
For the White Soda Bread Topping
Mix all dry ingredients, add butter and cut into the mixture using a pastry blender until the mixture resembles fine crumbs.
Add buttermilk and stir until moist.
Drop spoonfuls of Irish soda bread dough on top of the meat mixture in the 9 X 9 casserole dish.
Bake at 375 for 30-35 minutes until bread is golden brown.
